Q&A with Lisamarie Joyce on the Bar Industry in the Age of COVID-19

We recently caught up with Lisamarie Joyce to discuss the changes affecting the bar industry in light of COVID-19.

Joyce has over 17 years of experience in the bar and hospitality industry and has worked in everything from pubs to large franchises. Today she can be found behind the bar at Union Kitchen & Tap – Encinitas. She served as a regular mixology consultant on the hit TV show Bar Rescue, which fueled her passion for teaching. Her company LMJ Consulting LLC was formed to offer a different approach to teaching bar staff and participants can look forward to dynamic training courses, in-the-moment coaching and team cocktail creation. This ensures that the staff of all facilities work efficiently and meet the required customer expectations.

Bar Business Magazine (BBM): Did Union Kitchen & Tap remain closed during the COVID-19 closures or were they offering grab-and-go cocktails?

LisaMarie Joyce (LMJ): Union made the decision right from the start to completely close its doors. They decided to remain closed to do their part to protect their employees and our community until we were fully aware of what was happening. After almost two months we were all a bit nervous. We decided to open for take-away and to-go cocktails at Cinco de Mayo for a few hours. I had stacked well over 100 margaritas and we sold out in two hours! The turnout was incredible. We knew we had to bring ourselves back to serving our community – we just wanted to do it safely and responsibly. In the midst of our reorganization for a takeaway business, we received a 24 hour notice to open for dining. The pressure to reopen to the community has been overwhelming, but we were determined. Damn, that was a crazy 24 hours!

BBM: After the bar reopened at Union Kitchen & Tap, what changes have been made to ensure the safety of customers and staff?

LMJ: When we closed, Union took the opportunity to deep clean, replace equipment, fix anything that was broken, and paint. It was important to them to really give us an even better restaurant to come home to. But putting everything back together took a lot of work. We had new policies in every way we once operated. We have visible hygiene stations, mask duty, distance between all our tables. We have plexiglass dividers in high traffic areas, arrows on the floors, strictly designated bus drivers, outside hostess and no seating on the counter. Yes, you read that – no seating on the bar. It’s weird folks!

BBM: How have you observed how the bar industry has changed in the wake of the COVID-19 pandemic? How will the customer experience change when bars reopen and patrons return?

LMJ: To this day I would say it changed the bar industry. Things are changing every day and there is hope that things will get back to ‘normal’ but let me tell you how it is now. My counter top is blocked by plexiglass. We pushed three tables of four up to the bar so I could have at least a few guests. I wear a mask my entire shift. The first night when we opened the doors, I experienced so many emotions that I felt like I was on a roller coaster. A guest cannot enter the restaurant until a hostess has a table ready for him. You can’t just go to the bar to order a drink. We took out over half of our tables it looks so bare even when we are full. In the beginning I felt as many obstacles as I could make the guest feel okay.

I really had to step back and think of the guest. No, I may not be able to offer you the perfect craft cocktail of your dreams right now, but I have lime juice, agave, and tequila. I’ll make the best damn margarita. No, I may not be able to tell all of my funny jokes and entertain them like I used to, but I CAN dance and have fun behind that plexiglass!

It’s a different way of dining, but at its core, our passion for hospitality is the same. A friend told me: “Everyone has to learn a new way of interacting. Everyone learns anew how to live. Bartending is based on loving human interaction, the ability to read people and then adapt to their current mindset. This includes the good and the bad. It’s the same right now with roving eyes…under a mask…6 feet away…” Ha!

BBM: Do you have any advice or words of encouragement for the bar staff during these challenging times?

LMJ: Where do I start? First, find out about all the new rules and regulations. Returning employees will have LOTS of questions. Nobody knew the answer to the endless list of questions. Some of them have unemployment, some don’t. Some of them will want to return, others will be afraid. There must be no judgements, but of course we have to open again. Each area has different rules; Educate yourself to protect your employees and guests.

Second, TRAIN! Take the time to inspire confidence in your employees by teaching them how to work. In my personal experience, my shop closed, I didn’t hear much, and then BOOM, we open in 24 hours! As excited as I was, I’ll admit I was scared. My confidence was shaken. I didn’t know how to behave in this new world. How do I make enough money without a bartop? With all these limitations, how can I make super sophisticated cocktails? How do I lead a team when I don’t have answers? How can I be… me?

And then I took a deep breath. I think in these challenging times you really have to lean on your team. You have to communicate, get creative and work together. Allow yourself to cross that roadblock and then move on. There is always a way. That’s why we’re in this business. It’s unpredictable, keeps us on our toes and feeds our soul like no other!

BBM: Can you share with our readers a great recipe for a cocktail at home?

One of my favorite cocktails to take home!

Blackberry Bourbon Infusion

Ingredients:

2 ounces. Blackberry Bourbon (see infusion instructions below)

Squeeze of Lemon Wedge

3/4 oz. cider

directions:

To top up the bourbon, thaw 1 pint of frozen blackberries. Add to 1 bottle of bourbon. Leave to rest for 48 hours. Strain (Pro tip: eat the blackberries! Refrigerate leftovers.) Add ice for cocktail. Shake and pour into the glass. Top up with ginger beer. Garnish with a sprig of mint.

Known for shutting it down at Bar Rescue, Jon Taffer never expected to be the one shut down by a global health crisis.

“We shut down on March 13, 2020 – abruptly – with seven episodes left before the end of last season, which we never did,” Taffer, 66, tells PEOPLE. “They can put you on hiatus, but after a certain amount of time the hiatus has to end and you have to go to the next season.”

For the new season, which will star Bar Rescue’s 200th episode, Taffer focused his revitalization efforts on Las Vegas because he says Sin City has been hit “more than any other city” by COVID-19. The hospitality expert didn’t want to turn his attention to the big spots on the Strip, but to “local independent operations that have been devastated by the pandemic,” Taffer shares. “I felt like I could make the biggest impact here.”

While at Bar Rescue he usually has to deal with stubborn owners, incompetent managers and untrained bartenders, this time Taffer didn’t encounter disgruntled employees and poorly run bars. Rather, he found people devastated by the COVID-19 pandemic with their entire lives at stake.

“I haven’t walked through dirt this season. I have yet to come across an owner who treats employees disrespectfully. It’s not failed operators this time,” he says. “Instead, I walk into a place full of people who are demoralized. These people have lost their souls. You see no light at the end of the tunnel. Instead of beating her up this year, I gotta motivate her. I need to make them feel comfortable in their facility again, so come in and provide great drinks and great food and do a makeover for them.

Taffer and his crew, who were getting tested daily for COVID-19 during filming, couldn’t do their typical reconnaissance and stress test due to local health guidelines, so he set up a remote command center and brought in as many people as capacity would allow – but they had to issue four times as many orders to put the staff to the test. “I’ve had each person order four items, so I’m still making the load of 100 percent capacity,” explains Taffer.

The pandemic also made it difficult for the Bar Rescue team to source materials needed for the conversions at reasonable prices. “There is no design in advance. I design the bar when I get there that evening, so we literally have 24 hours to order and get all the materials and supplies we need,” says Taffer. “In a COVID world, man, it ain’t easy.”

But of course it made it, with some high-tech features, like hand-held scanners that look for viruses and special air-cleaning and hygiene technologies. “We’ve created, I think, some of the safest bars in America this season by bringing these technologies to space,” says Taffer.

He has relied on flavored spirits, particularly whiskeys, for some fun cocktails and sees flavored whiskey growing in popularity, particularly among female customers. And unsurprisingly, according to Taffer, “there’s no end in sight to the hard-seltzer trend.”

“The interesting thing about the seltzer business is that we find that people aren’t loyal to the seltzer brands, they’re loyal to the taste,” continues the TV personality, whose Mixologist line of Taffer offers hard seltzer. “So if you love black cherries and go to the crate and open the door and there’s Taffer’s Black Cherry and Truly Grapefruit, you’ll pick the black cherry.”

This differs from the beer industry, where Taffer says people typically prioritize brand loyalty. But beer “is destroyed,” he says. “The only beers that are doing really well right now are Mexican beers and pale ales, and they’re struggling to keep up.”

However, when Taffer wants to relax with a drink, he doesn’t go to a restaurant or bar.

“I have a beautiful home bar,” says Taffer. “I’m with so many people all the time, it’s really nice to just sit and have a drink with my wife. Those are the things I usually enjoy.”
