Korean-American chef

Roy Choi (born February 24, 1970)[1] is a Korean-American chef best known as the creator of the Korean-Mexican gourmet taco truck Kogi.[2][3][4][5] Choi is a chef celebrated for “food that is not fancy” and is known for being one of the founders of the gourmet food truck movement.[6] In 2019, Choi began presenting a cooking series on Netflix with Jon Favreau titled The Chef Show.

Early life[edit]

Choi was born in Seoul, South Korea to South Korean father Soo Myung Choi and North Korean mother Jai Nam Choi.[7] Choi’s parents met in the US but moved back to Korea after they got married. The family finally emigrated from South Korea permanently in 1972.[8]

Choi grew up in Los Angeles and Southern California. As Choi grew up, his parents had many businesses: a liquor store, a dry cleaner, a Korean restaurant, and after selling jewelry door-to-door, eventually a successful jewelry company.[9] When he was young, his parents owned a Korean restaurant called Silver Garden in Anaheim, California for three years [10]. Choi’s mother made kimchi, which was so popular in her community that she packaged it and sold it locally.[6] His fondest childhood memory is cooking dumplings in the family restaurant.[11] In his youth, the family often moved.[3]

His family once lived near Olympic Boulevard and Vermont Avenue, as well as in South Central, the Crenshaw District and West Hollywood.[12]

Choi attended a program for gifted students, but switched schools in his early teens when his parents became wealthy in the jewelry business and their family moved to a neighborhood in Orange County called Villa Park. [6] [13] Choi got into trouble. with his grades dropping when he started doing drugs and hanging out with other people.[3] At the age of 15, Choi’s parents sent him to Southern California Military Academy in Signal Hill, California. He remembers this as a positive experience.[3]

After high school, Choi went to Korea and taught English there. He then attended California State University at Fullerton, graduating with a bachelor’s degree in philosophy. Choi attended Western State University law school and dropped out after one semester.[3] At age 24, Choi said he was obsessed with Emeril Lagasse’s Essence of Emeril show.[14] The show inspired him to enroll in a culinary school. “Emeril saved my life,” Choi said.[3]

In 1996, Choi began studying at the Culinary Institute of America in Hyde Park, New York.[11] He enjoyed the highly structured block programs in which there was no wiggle room.[6] During his undergraduate studies, he worked as an intern at the three-Michelin-star restaurant Le Bernardin in New York City.[3]

Career [edit]

Choi gained experience as a hotel chef in society[2] and began working for Hilton Hotels in 2001. After being promoted within the company, Choi became executive chef at the Beverly Hilton in 2007. There Choi met his future business partner Mark Manguera.[3] Choi also worked at the Embassy Suites in Sacramento and the Rock Sugar Pan Asian Kitchen in Los Angeles.

After that classical training and years of background in four- and five-star cuisine, Choi said the move to the food trucks originally based on Venice’s Abbot Kinney Boulevard[15] was great.[2] Choi’s company Kogi was founded in 2008 with partners Mark Manguera and his wife Caroline Shin-Manguera.[3]

He was named one of the top ten “Best New Chefs” of 2010 by Food and Wine magazine and is the first food truck operator to receive this award.[11] Choi currently runs Sunny Spot in Venice, California, which is inspired by the Caribbean. He managed the restaurant Chego! with rice bowls[16] and A-Frame conveying the Hawaiian idea of Aloha and built in a former IHOP[6] next to Pot[17] at the Line Hotel in Koreatown[11]. In December 2018, Choi opened a restaurant called Best Friend in Las Vegas, NV.[18] His cooking style blends Mexican and Korean flavors and dishes.[19]

In June 2013, Choi, along with his colleagues Wolfgang Puck and David Chang, met at Hotel Bel-Air to fuse different styles such as ggaejjang style and kochujang on Hotel Bel-Air’s menu.[20]

In November 2013, Choi published his autobiography, part memoir, part cookbook[6] entitled L.A. Son: My Life, My City, My Food.[21][22]

Choi said he hasn’t started writing a book, but has been asked the same questions over and over again about his food, its taste, and its preparation.[23] While Choi doesn’t see the book as a social commentary, he felt it was important to show the “real deal” of the duality he felt as an immigrant in the 1970s; The food served at the restaurant was very different from what the family ate at home. The book also talks about Los Angeles culture and how it has changed since the 1970s.[23]

The Jon Favreau film Chef (2014) was loosely inspired by Choi and the food truck movement. Choi worked on cooking and restaurant scenes as Favreau’s technical advisor and appears in the credits. In addition to attending all of Choi’s restaurants, Favreau attended a French culinary school and trained in several of Choi’s kitchens. In 2019, Favreau and Choi collaborated on a cooking show on Netflix: The Chef Show.[25]

Time included Choi in their TIME 100 list of the world’s most influential people for 2011[4] and 2016.[26][27] Fellow chef and author Anthony Bourdain wrote that “Roy Choi first changed the world when he took the food truck concept from a ‘roach coach’ to a highly sought-after, ultra-hot, yet democratic, rolling restaurant.”[26 ] In 2015, Choi and Executive Chef Daniel Patterson opened a restaurant called LocoL in Watts, Los Angeles with the goal of bringing quality, healthy, and inspired fast food to inner-city neighborhoods.[28]

In 2019, Choi produced and hosted a television series, Broken Bread on Tastemade and KCET in Los Angeles.[29]

Personal life[edit]

Choi is nicknamed “Papi” and “El Guapo.”[15]

He teaches cooking when he volunteers at A Place Called Home in South Los Angeles.[30]

Choi is a supporter of 3 Worlds Cafe, a coffee and smoothie shop in the South Central community that is a collaboration between Choi, the neighborhood-based Coalition for Responsible Community Development, fruit conglomerate Dole Packaged Foods, and nearby Jefferson High School is.

He also maintains a blog where he posts recipes and tirades.[19]

During his difficult teenage years and later as a young adult, Choi said he had many addictions. He was briefly addicted to crack, marijuana and gambling, lasting three years in his early 20s. Choi says his current addiction is feeding people.[6]

Choi has one daughter.[3]
