One thing bugs ‘MasterChefs Latinos’ judge Adrián Herrera

BAKERSFIELD, Calif. (KGET) — It would be logical to assume that the key to being a good cook relies primarily on a person’s sense of taste or smell. It could be argued that the ability to visualize a proper presentation would be an important key.

Chef Adrián Herrera – one of the judges on the new Estrella TV series “MasterChef Latinos” – puts all these culinary attributes second to what it takes for a chef to be at his best. The best cooks have good ears.

“The only thing they consistently get wrong is everything,” says Herrera. “But the one big thing is they just don’t listen. I hate that. I don’t know why they don’t listen to what we tell them.

“I think they actually enjoy not listening to us.”

The bottom line for Herrera is that someone may have all the skills to be a great chef, but that doesn’t matter if they approach cooking with the wrong mindset.

Listening — and ignoring — the contestants from “MasterChef Latinos” Herrera and fellow judges Chef Claudia Sandoval and Chef Benito Molina can be seen when the cook-off airs at 8 p.m. Thursdays on Estrella TV (viewable locally on KBBV-CD, channel 19).

The “MasterChef” franchise has become popular worldwide as it is manufactured in more than 50 countries. It is watched by more than 250 million viewers worldwide.

Whether the show is set in America, France, or Australia, the premise is basically the same. Thousands compete for the MasterChef judges, but only the top 16 chefs make it into the MasterChef kitchen. The idea is to find the best amateur chef in the country.

The only thing that makes each show different is the composition of the candidate pool. Herrera points out that this show features contestants from the United States, Mexico, Puerto Rico, Peru, Venezuela, and Cuba who are now residing in the United States.

“It makes the show a different kind of game because they have to remember that they’re still Latino, but not in their home countries anymore,” says Herrera. “They must try to remember their tastes and cherished moments with their families.

“That’s the key to getting the real cooking from them.”

The place where a person grew up can affect a variety of aspects of cooking, from ingredient selection to seasoning. Herrera points out that while some regions of Latin America are more accepting of spicy foods, there are regions that tend to take a milder approach.

Herrera and the other judges noted that while many of the contestants presented what they felt was an authentic representation of their heritage, the dish was actually given an American touch. This comes from a combination of the participants having lived in the United States for years – or even decades – and not having access to the same ingredients they used in their countries of origin.

90% of the time, Herrera can tell right away if someone has what it takes to be a great chef. He is sure that those who get to the top have something special in them.

“There’s this area of the brain that’s able to understand flavors, the very complex relationship between flavors and textures and flavors. We are talking about a very complex phenomenon here,” says Herrera.

Herrera proves that some people are just born to be great chefs. He never took classes or attended school before deciding to try his hand at cooking. Self-taught, he went from rancher to restaurant owner, using his own natural gifts and love of cooking.

He has been awarded the Distinción Boohemia for Best Chef in Town and has been nominated for Best New Restaurant by Travel & Leisure’s Gourmet Awards. In addition to being a judge at MasterChef Latinos, Herrera has written numerous books and served as editor of Grupo Milenio.

Herrera will be ready to share his knowledge with anyone who will listen during the show. The 16 best home chefs and home cooks in the competition are:
